Tucked away in downtown Ashland, Oregon, nationally acclaimed Chef Josh Dorcak showcases his signature Cascadian cuisine tasting menu in an intimate setting at MÄS. Dorcak trained at the California Culinary Academy in San Francisco and honed his craft in Bay Area kitchens before landing in Ashland almost by chance. MÄS opened in 2017 as a pop-up before securing a permanent location the following year.
Dorcak’s deeply seasonal, Japanese-influenced approach to Pacific Northwest ingredients has earned him a string of prestigious accolades, including being named one of the 50 best restaurants in the country by the New York Times in 2022 as well as a James Beard Award semifinalist for Best Chef: Northwest and Pacific for four consecutive years. His advancement to finalist status three years in a row is a highly remarkable achievement that has placed Southern Oregon firmly in the national culinary conversation. Dorcak continues to expand his culinary footprint in Ashland with additional ventures including the izakaya-style NAMA, the members-only Kandõ, and Good Juice, a sake and specialty wine shop.
